My friend and I stayed one night after a birthday bestie cruise on Holland America, and we agreed it softened the landing. Instead of rushing off the ship, fighting the crowds and heading straight home, we simply walked across the street for one more night by the water. Fairmont also offers complimentary luggage transfer service from the guestroom to the terminal for some cruise guests, which makes it especially convenient for travelers staying before a cruise.

Here’s what stood out most:

- The room size: Our two-queen room had plenty of space for two friends sharing.
- The water view: Watching the ship and harbour from the room made the stay feel very Vancouver.
- The bathroom details: Robes, slippers, turndown service and rose-themed toiletries gave the room a more pampered feel.

- Included bike rentals: We used the bikes to ride around Stanley Park, which turned into one of the best parts of the stay.

- The bees and rooftop garden: The hotel’s beekeeping and garden program adds personality and a real sense of place.
The Room: Spacious Enough for Two Friends Sharing

Our room had two queen beds, a view of the water and our cruise ship, and plenty of open space so we never felt like we were tripping over each other’s bags. That matters on a bestie trip, especially at the end when everyone’s suitcase has somehow expanded.
The room felt comfortable and calm rather than flashy. The bathroom had the kinds of details that make a one-night stay feel more elevated: robes, slippers and turndown service.
The hotel is renovating rooms over the next few years, with about 25 percent completed at the time of my stay. The updated design direction is inspired by nature in an urban environment, with tables instead of traditional desks. That makes sense for this hotel. It is in the middle of the city, but its best moments are tied to the water, mountains, garden and rooftop.

For cruise travelers, Fairmont Waterfront’s location is hard to beat. Anyone who wants to avoid a complicated transfer on embarkation or disembarkation day will love the convenience of staying at the Fairmont Waterfront.
The bell team can transfer luggage directly from the guestroom to the terminal for cruise guests, which is exactly the kind of detail that matters when travel days involve bags, passports, boarding times and crowds. For a pre-cruise stay, that means you can wake up close to the ship and start the day without a complicated transfer. For our post-cruise stay, it meant our trip didn’t end in a rush.
ARC Restaurant: Bottomless Brunch Is the Meal to Plan Around

ARC Restaurant is Fairmont Waterfront’s on-site restaurant, and weekend brunch is a full foodie experience. Their Bottomless Brunch is a signature experience, with unlimited brunch small plates, coffee or tea.
The concept is simple: pay one price and order as many small plates from the brunch menu as you like. The twist is that the small plates are not actually that small. My friend and I tried a little bit of everything. I take biscuits seriously, and Arc’s homemade biscuits are off the charts. The honey butter is made with honey collected on site, and that detail made it even better.

Dishes included lobster mac and cheese, an avocado croissant with salmon, eggs Benedict, biscuits with honey butter and an Ooey Gooey skillet to end the meal.
Even if you don’t stay at the Fairmont, book the brunch. It was a highlight for us.

The Bees, Rooftop Garden and “Wellness Without Walls”

Fairmont Waterfront rooftop makes the hotel feel more like an urban retreat than a city stay. There is an on-site apiary and rooftop garden, and when the season allows, guests can tour the apiary. There were no bees when we toured, but it was still interesting. Plus, the honey from the bees is used in the restaurant, which is a small detail that makes staying here feel rooted in Vancouver.
The hotel’s garden and bee program also connect naturally to its broader wellness feel. Fairmont Waterfront rooftop has a pool, garden, apiary, seasonal poolside food, yoga on Fridays in summer and sound bathing in winter. Fairmont Waterfront keeps bees on-site and uses ingredients from its rooftop garden in ARC’s seasonal dishes. The hotel frames this as “Wellness without Walls,” which fits the experience. Wellness here feels like being outside, riding along the water, eating well and relaxing.
Biking Stanley Park From the Hotel

We took advantage of the bike rentals that were included in our stay, and rode around Stanley Park. It was windy, mostly flat and we got to see an area of the city we might have missed on foot.
This is one of the reasons I like Fairmont Waterfront’s location for a Vancouver stay. You can arrive, enjoy the view, eat well and still do something active without renting a car or building a complicated itinerary. Stanley Park’s Seawall is one of Vancouver’s signature experiences, and from this hotel, it is very doable.
For women traveling together, this kind of built-in activity gives the trip a little adventure, but not the kind that requires gear.
Dinner Nearby: Miku Is Across the Street and Worth Booking

Miku, a Michelin Guide-recommended restaurant known for aburi sushi, is across the street. A friend suggested we try Miku’s aburi salmon oshi sushi and she was so right! It was fantastic.
Be sure to book a reservation as soon as you have a date, it is a popular restaurant.
What I Would Do Differently Next Time
I would stay at least two nights and I would build my stay around the hotel more intentionally. If I were staying before a cruise, I would arrive early enough to make the hotel part of the vacation and enjoy the amenities. If I were staying after a cruise again, I would do exactly what we did: add one more night, bike a little farther and eat more biscuits.
What’s Worth Your Time During a One-Night Stay

For a one-night stay at Fairmont Waterfront, I would not overplan. The hotel’s biggest advantage is that it lets you enjoy Vancouver without making the day feel packed.
Here’s how I’d spend the time:
Before dinner: Check in, enjoy the water view and take a walk along the waterfront.
Dinner: Book Miku for salmon oshi and a polished Vancouver meal.
Morning: Do ARC’s Bottomless Brunch if you are there on a weekend.
Activity: Use the hotel bikes for a ride around Stanley Park.
Downtime: Leave time for the rooftop pool and apiary tour.
